Sorry, that banh xeo is all type of wrong its sacrilegious to only use pork belly. The cooked belly would be chared with a nice porcine crunch and the rendered fat would add more flavor to the carrier of the protein. If possible try it with calamari.

Yeh, billy, that sounds absolutely great. Pho Oregon was a bit disappointing, but locals seem to like it, so they probably know to avoid the banh xeo.
