A lot of people avoid the fat in soups, but it's all flavour!! When I make pho, I usually skim the scum and fat once or twice and then leave it. The rest of the fat is from the bone marrow; beefy deliciousness!

beef-a-licious, love that word :)

Hi Christine - Yep, a decent amount of fat is good!

Hi Kat - I really couldn't come up with a description, so I just typed that out....... it was beef-a-licious.

I think we have a new culinary term "beef-a-licious!"

wow, that last picture....i like the look of that masa crust!

ed (from Yuma)

Yeh, the cabeza looks so rich, but that borrego sope looks even better--positively lamb-a-licious.

Gonna work out tomorrow then go straight to the local taqueria to try my first birria. Love me some soup! Hopefully it will be a positive experience like yours

Hi Carol - I guess I'll keep that word then.....

Hi CC - The Missus enjoyed it, but it was a bit too much masa for me.

Hi Ed - The borrego is the king of the menu here.

Hi Sawyer - I hope you got some good birria! It's really nice to hear from you.

It is bed food! After we ate there, Peter and I fell into a heavy dreamless sleep and woke up 5 hours later! The lamb is really delicious and worth the sleep!

Hi Ange - Yeah, it's eat then nap food.....

Ah man, ho'd I miss this? Too bad about the pork chops. We had those a few weeks back and they were crispy and salty. I guess it all depends on who is back behind the curtain.

Man that cabeza looks good.

Hi Jan - The Missus enjoyed the hot pot, I wished they had the stuff I really wanted, maybe next time. That cabeza en su jugo is really can ask the folks who went on our "taco tour".....
