A lot of people avoid the fat in soups, but it's all flavour!! When I make pho, I usually skim the scum and fat once or twice and then leave it. The rest of the fat is from the bone marrow; beefy deliciousness!

Yeh, the cabeza looks so rich, but that borrego sope looks even better--positively lamb-a-licious.

It is bed food! After we ate there, Peter and I fell into a heavy dreamless sleep and woke up 5 hours later! The lamb is really delicious and worth the sleep!

Ah man, ho'd I miss this? Too bad about the pork chops. We had those a few weeks back and they were crispy and salty. I guess it all depends on who is back behind the curtain.

Hi Jan - The Missus enjoyed the hot pot, I wished they had the stuff I really wanted, maybe next time. That cabeza en su jugo is really good....you can ask the folks who went on our "taco tour".....
