Hi Jeff - I enjoy a combination of textures, so long that the cutlet is not saturated, or the breading is not "peeling off" the cutlet. Katsudon is good comfort food, but it's just a bit too hot for it right now!

I wish I could go back to Kadena Air Base in Okinawa to the little shop just outside Gate 2 for Katsudon. They put the egg on top of the bowl, sunny side up style. Absolutely delicious. Crisp and clean - not like the soggy masses usually described on the internet.
